Chicken Melodi
Serves Four
Ingredients:
4 - boneless skinless chicken breasts
10 - strips of bacon
1 - small white/yellow onion
10 - medium sized mushrooms
1/4 - cup of dry white wine
1 - cup of stoned ground mustard
1/3 - cup honey
1 - teaspoon Tabasco Sauce
1 - teaspoon Worchester Sauce
1 - lemon
1/2 - cup if olive oil
1 - teaspoon of minced garlic
Rub the chicken breasts with fresh garlic a little lemon juice and sauté in a little olive oil. Dice the bacon and cook in a separate pan until almost crispy. Remember, once you add to the bacon while it's cooking it stops the cooking process as far as the bacon is concerned. Add to the bacon diced onion and mushrooms and cook until both are tender (approximately 2 to 3 minutes). Drain all fat. Add dry wine and simmer until dry.
In another sauce pan combine the mustard, honey, Tabasco and Worchester sauce and reduce to a medium heat for 2 to 3 minutes or until the sauce is thick. Assemble the chicken breasts on top of the bacon/mushrooms mixture and top with the mustard sauce.
